an apple (or two, or three, or five) a day

We took a trip to the apple orchard a few weeks ago and came back with approximately 382 pounds of apples. Well…maybe not that much. But it was certainly a lot, and then we realized that we were going to have to find something to do with all of these wonderful Macintosh’s. Because, as it turns out, we just don’t like to eat that many fresh apples.
So we’ve been tossing them into dishes like baked chicken with apple stuffing, or curried butternut squash and apple soup (surprisingly a huge hit with Hannah). Then I saw this post on not martha and decided to try the recipe for ourselves. We call them "apple pie pancakes".
In a word: YUM.
It’s probably not the healthiest of breakfasts, but it sure is delicious. And on the rare occasion when there are leftovers, topping it off with ice cream makes a wonderful desert. Mmmmmm – I want some now…
